The MICHELIN Guide in Korea, in numbers
The Korean edition launched in 2016, and the MICHELIN Guide Seoul & Busan 2026 selection, announced on 5 March 2026, is:
| Tier | Seoul | Busan |
|---|---|---|
| Three stars | 1 | — |
| Two stars | 10 | — |
| One star | 31 | 4 |
| Bib Gourmand (빕 구르망) | 51 | 20 |
| Selected (셀렉티드) | 85 | 31 |
| Total listed | 178 | 55 |
Forty-six restaurants hold stars, alongside 116 Selected restaurants and four Green Stars. Mingles (밍글스) is the country's only three-star restaurant; Mosu (모수) returned after more than a year closed and was awarded two stars straight away.
The geographical limit is important: the Korean selection covers two cities. There is no MICHELIN Guide for Jeonju (전주), Gyeongju (경주), Jeju (제주), Daegu (대구) or Gangneung (강릉). An unstarred restaurant in those places has not been passed over — it is outside the published guide’s coverage.
What a star measures
Michelin awards stars for cooking quality. Its five criteria consider ingredients, cooking technique, how flavours work together, the chef’s individual style and consistency across the menu and over time. Décor and service do not determine a restaurant’s stars. One star recognises high-quality cooking; two indicate cooking worth a detour; three indicate cuisine worth a special journey.
Bib Gourmand can help you find moderately priced meals. It marks restaurants serving a full meal at a moderate price — in Seoul, roughly ₩45,000 or under per person. The 2026 selection includes 71 Bib Gourmand restaurants, including noodle and soup specialists. Prices and booking availability vary by restaurant.
Blue Ribbon Survey: how the ribbons work, and what they do not mean
Blue Ribbon Survey has been published since 2005 and is the country's oldest restaurant guide: two volumes a year, a Seoul edition and a national one, with ribbons awarded from readers' scores rather than by inspectors. The four levels, distinguish a listing from a ribbon award:
| Mark | What it is meant to say |
|---|---|
| Listed, no ribbon (수록) | The guide recommends visiting if you are nearby. |
| One ribbon | The guide recommends returning to this restaurant. |
| Two ribbons | The guide considers this a restaurant to recommend to others. |
| Three ribbons | The guide places this restaurant among the best in its category. |
The 2026 Seoul edition gave three ribbons to 43 restaurants, two to 301 and one to 663, from over 70,000 readers voting. A sticker alone does not tell you the current award level.
Check the restaurant’s current guide entry for its ribbon count and award year. A listing without a ribbon is different from a ribbon award. Promotional campaigns, such as the Coca-Cola Red Ribbon campaign, are separate from the standard one-, two- and three-ribbon scale.
The plaques that are not food awards at all
Two more marks appear beside Korean restaurant doors, both from government, and both about hygiene rather than cooking.
- 모범음식점 (exemplary restaurant) is designated by the district office under the Food Sanitation Act's Enforcement Rule, and what it assesses is the water supply and drainage, the building and its surroundings, the kitchen fittings, ingredient storage, staff service, the display of side dishes and prices, and the handling of leftover food. Nothing in that list is about how anything tastes.
- 음식점 위생등급 (restaurant hygiene grade) is the newer scheme, under Article 47-2 of the Food Sanitation Act: a restaurant applies, is assessed, and is graded for three years; the grade must be displayed and can be revoked if standards slip. This grade assesses hygiene rather than flavour.
A third mark is about age rather than either. 백년가게 — literally "hundred-year shop" — is awarded by the Ministry of SMEs and Startups to businesses trading 30 years or more; the July 2026 round added 150 shops, bringing the total to 1,545. This designation can help you find long-established businesses, including restaurants. It does not necessarily mean a restaurant specialises in a single dish.
How to use all this on a trip
- Check reservation arrangements early if you want a starred meal. Seats open on the restaurant's own schedule, deposits are normal, and a no-show forfeits money — “When do restaurant reservations open?” and “Restaurant deposits and no-show penalties” explain the booking terms.
- Compare the menu and price before choosing. Bib Gourmand can be useful for a moderately priced meal, while starred restaurants offer a range of dining styles.
- Outside Seoul and Busan, look for other restaurant information, such as Blue Ribbon's book listings, hundred-year shop (백년가게) plaques and the dish descriptions in “Regional specialities by city”.
- Check the guide’s current restaurant entry. A window sticker may refer to an older award or a separate promotional campaign.
