Korean BBQ: how it actually works

Watch it done

The best way to eat Korean BBQ — Korean Englishman (영국남자)

Who does the cooking

Service varies by restaurant, so ask whether the staff will cook the meat for you.

Casual and all-you-can-eat restaurants often leave the grilling to customers, while some specialist restaurants provide cooking service. The restaurant’s price or choice of meat does not guarantee either arrangement. Ask before starting.

If staff begin cooking at your table, ask whether they will handle the whole meal or just help you get started.

The tools, and the one that surprises people

Restaurants commonly provide tongs and kitchen scissors. Larger pieces of meat may be cut during cooking: hold the meat with tongs and use the scissors to divide it into manageable pieces. Ask staff to demonstrate if you are unfamiliar with the equipment.

The order you put things on

The cooking order depends on the cuts and the grill. These steps can help prevent burnt marinade from affecting the next batch.

  1. Unseasoned before marinated. Salt-grilled (소금구이) cuts go first; marinated (양념) cuts go last. Sweet marinades can burn onto the plate and affect the next batch.
  2. Use a clean cooking surface for the next batch. Ask the staff when to replace the plate, especially when changing from marinated to unseasoned meat.
  3. Follow the staff’s instructions for your grill. The best placement and cooking method depend on the cut and equipment.
  4. You can grill kimchi and garlic if the restaurant’s setup allows it. They can also be eaten as served. Ask the staff where to place them.

The cuts, in the order you will meet them

KoreanEnglishWhat to expect
삼겹살Pork bellyThis fatty cut is often served unseasoned in thick slices.
오겹살Pork belly with skinThe skin gives this cut a chewier texture.
목살Pork collar or neckThis cut is generally less fatty than pork belly.
항정살Pork jowlThis is a richly marbled cut; check the portion size and price.
갈매기살Pork skirtThis cut comes from near the diaphragm and is usually leaner than belly.
돼지갈비Pork ribsThese ribs are often served in a sweet marinade, which can burn quickly.
등심 / 채끝Beef loin or striploinThese are beef cuts; check which cut the menu offers.
살치살 / 안창살Chuck flap or outside skirtThese are different beef cuts with different textures and prices.
차돌박이Thinly sliced brisketThese thin slices cook quickly, so watch them closely.
양념갈비Marinated beef short ribsThe sweet marinade can burn, so ask staff for cooking guidance.

1인분 — one portion — is the unit you order in, usually 150–200 g of pork or 100–150 g of beef, and most barbecue houses will not serve a single portion at all; “Minimum orders and the two-portion rule” covers the two-person minimum and how to get round it.

Building a ssam

쌈 (ssam) means "wrap", and describes a leaf wrapped around meat and other fillings.

  1. Take a lettuce leaf (상추) in your palm, and often a perilla leaf (깻잎) on top of it — the perilla is aniseed-ish and is the thing people either love or leave out.
  2. Add a piece of meat.
  3. Add a dab of 쌈장 (fermented soybean and chilli paste), or dip the meat in the 기름장 (sesame oil and salt) first.
  4. Add a slice of grilled garlic, a strand of 파절이 (spring onion in chilli dressing), a little rice if you have ordered it.
  5. Fold it into a parcel and eat it comfortably. Small wraps are usually eaten in one bite.

Wraps, sauces and side dishes are often included, but check which refills are free — “Banchan (반찬): the free side dishes and refills” covers the rules, including the one that matters most here: a restaurant may not legally re-serve what you leave.

Reading the wall

Korea grades beef and pork, and some restaurants display the grade. Grading is compulsory for cattle and pigs, run by the Korea Institute for Animal Products Quality Evaluation under the livestock grading standard:

Two labels beside the grade tell you more than the grade does. 원산지 (country of origin) is compulsory, and for beef it must name the type of animal — 한우 (Korean native cattle), 육우 (domestic beef cattle) or 젖소 (dairy cow) — under Article 3(5) of the origin-labelling decree; domestic pork belly (국내산 삼겹살) and imported pork sit at visibly different prices on the same menu. 이력번호, a traceability number, is usually not on the wall: the Livestock Traceability Act requires it only of premises of 700 m² or more, so an ordinary neighbourhood barbecue house is outside the duty. Where a number is shown, it can be looked up on the traceability portal.

What it costs

Seoul averages for June 2026, from the national dining-out price survey:

DishSeoul average
Pork belly (삼겹살), 200 g₩21,321
Cold noodles (냉면), one portion₩12,615
Kimchi stew set (김치찌개백반)₩8,654

These are survey averages rather than fixed menu prices. Check the restaurant’s price and weight per portion; Korean native beef, called hanwoo (한우), can cost substantially more than pork.

The ending

If you are still hungry after the meat, look for the 식사 section of the menu, which lists meal dishes such as rice, noodles and stew. These are optional additions:

Smoke and cooking smells can linger on clothing even when the table has an extraction hood. Wear something you are happy to wash, and consider bringing a layer you can put away while eating.
